Cabbage Celery Soup

Low carb soup
Ingredients
- 2 med-large onions - chopped
- 2 celery ribs, split and chopped
- 2 pounds ground beef
- 1/2 cabbage head, cleaned and chopped
- 2 carrots, scrubbed and sliced to around 1/8" - 1/4" thickness
- 6 beef bouillon cubes
- 1 teaspoon salt or to taste
- 1/4 - 1/2 teaspoon garlic powder or 2 cloves, diced
- 1/4 - 1/2 teaspoon black pepper
- 1 - 29 ounce can of crushed tomatoes
- 2 - 29 ounce "cans" of water
Directions
Cook onions, celery, and beef in an 8
quart pan over medium to medium-low heat until the ground beef is done and
vegetables are soft. Add the rest of the ingredients. Bring to boil,
reduce heat to simmer. Cover pan and simmer for an hour or more. Season to
taste
Leftovers can be refrigerated for a couple of days. Beyond that freeze
leftovers in quart size jars.
