Donna Young's Potato Salad

I developed this recipe the same year that I grew cucumbers and made two different kinds of sour pickles - garlic and dill. I also grew potatoes that year and the first batch of this salad was made with homegrown potatoes and homemade pickles The main reason that I made this recipe is that I wanted to make something that my children would eat and it turned out that everyone liked this potato salad and now I am required to bring it to every family cookout, since the 1990's.

Ingredients

  • 2 pounds of potatoes - ( 5 average sized potatoes )
  • --- The Dressing ---
  • 4 Tablespoons mayonnaise
  • 2 Tablespoons prepared mustard
  • 1 Tablespoon Worcestershire sauce
  • 1/2 (heaping) teaspoon salt
  • 3 Tablespoons finely chopped dill pickle

If you like peelings on your cooked potatoes, scrub the potatoes and trim them - cut off the bad spots and eyes; or peel the potatoes. Cut the potatoes into cubes that measure 1/2 inch thick. The width will vary but should not be larger than 1 inch. The size is important because if the pieces are too large, they will not absorb enough of the dressing. Put the potatoes in a saucepan, cover with water, and set on the stove to boil. Allow the potatoes to boil for 5-7 minutes. Set a timer and keep the timer with you. Check for doneness with a fork. When done, the potato should be easily pierced with a fork, but it should not fall to pieces. Do not let the potatoes get too done. Pour the potatoes into a colander and let drain in the sink.

Meanwhile, prepare the dressing. Mix the dressing ingredients together in a small bowl. Should you taste the dressing, be warned, the dressing should taste very salty.

After the potatoes have drained, pour them into a serving bowl. Pour the dressing over the potatoes and stir.

Makes 6 servings

Two Pounds of Potatoes - ( 5 average sized potatoes ): An average sized potato is around 4 1/2 inches long and around 2 3/4 inches across. The recipe is based on weight, not on 5 potatoes and even if you get a tape measure and measure your potatoes, the potato/salt ratio could be off. If that is the case, it is not a big deal, just taste of the finished potato salad and if you think it needs more salt, then add more salt.

Lastly: Buy a kitchen scale if you don't have one. Some kitchen scales are inexpensive and small and some kitchen scales are expensive and big. My kitchen scale is cheap and small and that is okay with me.
